Agave Apple Topping

A marvelous, multi-purpose topping for pork chops, pound cake, cheesecake, waffles or pancakes.
2 apples, pared, cored and diced
1 cup apple juice
1/2 cup orange juice
1/4 cup agave
3 tablespoons golden raisins
2 teaspoons grated orange peel
1/4 ground cinnamon
4 teaspoons cornstarch
1 tablespoon water

Combine apples, apple juice, orange juice, agave, raisins, orange peel and cinnamon in a saucepan. Bring to boil; reduce heat to low and simmer about 5 minutes or until apples are tender. Mix cornstarch with water; add to apple mixture. Cook and stir until mixture boils and thickens.
